Kids Cook Monday (seriously!)

How long has it been since we did a Monday food post?  Forever, maybe?  Hannah Jane made vegan faux parm last week, but my camera was broken so we filmed it on my phone and the file sizes were to big to e-mail to myself.  Ooops.  But the parm was good anyway.

This week the boys made Vegan Carrot date muffins and they were easily my favorite vegan baking that we've tried yet!  So moist, not at all heavy and rock-like like so much vegan baking seems to be.  You can find the recipe here and we substitutes date bits for the raisins for a little smoother texture.

Haven actually poured a measured cup of rice milk with no spill!  Bravo, Haven!

Hunter combined and whisked up all of the ingredients. 

These are just some of the yumalicious muffins!  This recipe made a dozen large muffins and 24 mini muffins and they were so stinking good that we couodn't stop eating until they were gone.  That's right, folk!  We ate them all in the course of a day and a half.  So if you have self control isues like we do, this might not be the best recipe for you!  too good to stop!
